Do you like the taste of your pork or chicken done on a BBQ grill? Doing your meat on a grill is a great way to cook your meat to get that tasty grilled flavor. A great benefit of doing your meat on a grill is that you can flavor your chicken or pork with the spices you like.

Rotisseries use a lower heat setting, which uses less fuel, and your meat rotates continuously which allows the meat to get done evenly on all sides. There are some differences between grilling and rotisserie cooking that you need to be knowledgeable of. The first thing, and probably the biggest thing, that while most grilling is done over a very hot fire, but with rotisserie cooking you use a lot less heat for a longer time. Also with grilling your meat and heat are stationary but with the rotisserie your meat is moving around the heat.

Looking at your equipment. You will need a attachment for your particular grill, these can vary depending on the size and make of your grill. Today many of the newer grills come with rotisserie attachments and some even have a special rotisserie burner. Another thing to consider is the fire, you do not want a hot fire directly under the food you want to spin. Many of the meats that you are cooking will be on the larger size so they can get very close to the fire. If you are using a gas grill keep the fire turned low.

To eliminate flare-ups it is best to keep a drip pan under the meat which will also keep the direct heat away from the meat. When using a grill it is best to use less heat and cook your meat longer for some savory tasting meat.

As for cooking times your best bet is a meat thermometer. Cooking charts might be a good guide but differences in equipment and size of meat can change these calculations. The thermometer will tell you exactly when the food is fully cooked. Best guess just won’t cut it when it comes to grilling.
